Get Cozy This Fall With My Favorite Comfort Soup Recipes

Is it soup season yet? Your answer may be no, but there is no time like the present to gather your comfort recipes and cozy blankets to prepare for the chilly nights ahead. As soon as the leaves start changing and the mornings get cool, I can always count on these recipes to put me in the harvest mood (even if the weather doesn't)!
I am going to share with you two of my favorite soup recipes that are a staple in my family every fall. Whether you are anticipating the autumn weather or have that seasonal cold, I can assure you these soups will cheer you up. So grab your pen and paper, because you do not want to forget about these!
My Go-To Taco Soup
Ingredients
2 lbs of ground beef
1 chopped onion
2 taco seasoning packets
1 can of diced tomatoes
1 can of black beans
1 can of pinto beans
1 can of dark red kidney beans
1 can of corn (drained)
2 cans of green chiles
Salt and pepper
Optional Toppings: Cheese, Frittos, and Sour Cream
Directions
Start with browning your beef and chopped onion on medium heat in a large pot.
Once beef is browned, drain off excess grease, and add in taco seasoning packets then salt and pepper to taste.
Then add all of the remaining canned ingredients. Mix until thoroughly combined and bring to a boil.
Next, reduce heat to low and simmer for 20 minutes.
Now your soup is ready! You can add optional toppings to your soup and enjoy!
My Cozy Chicken Noodle Soup
Ingredients
1 rotisserie chicken
1 chopped onion
4-5 stalks of celery chopped
1 tbsp of olive oil
1 can of sliced carrots
2 (32 oz) cartons of low-sodium chicken broth
2 (32 oz) cartons of vegetable broth
1 bag of wide egg noodles
Basil
Oregano
Salt and Pepper
Optional: Saltine Crackers
Directions
Start with your oil, chopped onion, and chopped celery on medium heat in a large pot. Cook until soft/translucent (5 mins).
While that is cooking, shred the chicken from the rotisserie chicken to desired thickness.
Then combine shredded chicken, carrots, chicken broth, vegetable broth, egg noodles, and all seasonings to taste to the pot. Mix until thoroughly combined and bring to a boil.
Next, reduce heat to low and simmer for 20 minutes.
Add additional seasoning if desired and enjoy with crackers!
